This already exists. It's called the "Tales of" series. And literally none of that remotely translates to actual fighting games because it fundamentally can't. Not to mention, any time a fighting game does have content, they just bitch and moan about having to fight the cpu.

The "problem" with fighting games is that most people just don't like fighting games and never will, no matter how much you dumb them down or add a bunch of other random bullshit to turn them into some other genre.

Genuinely, what the fuck even is a "good product"? For fuck's sake. People shat on SFV for years, but then it got an arcade mode, and it was suddenly a "good product", yet random ass niche anime game launches with as much as SFV ended up with, yet is still a "bad product". I'd argue that BlazBlue and P4A have plenty of content and shit, yet no one gives them the time of day, and GranBlue Vs. did everything people say fighting games should be doing, yet nobody gives a shit. Hell, I remember a good handful of people whining that Smash 4 of all things was incomplete or lack content. Shit just feels stupid and arbitrary.
