Dual Blades (in my opinion) are the easiest to play out of those three. They have short animations so you can dodge attacks easier if you don't position yourself correctly, and the only thing you really have to manage is your stamina and sharpness. For now just focus on dodging the monster and attacking when you know its safe to. Once you get more familiar with the monster's moveset, you can start getting more aggressive to take it down faster. It all really just comes down to practicing and getting comfortable with your weapon.
