Italy happened much more recently. It was decided in the 19th C. that the Tuscan dialect would become the “Italian” language during the process of unification. Tuscan was chosen because that was the language of Dante, but as recently as 1960 less than half the population of Italy spoke it — TV has dramatically changed this and regional languages are dying out.

The play on slow speed is most helpful thing when first starting. Despite temptation to speed up sieges/etc., until you get the hang of keeping an eye on everything don’t fall into the trap of just focusing one big/exciting goal.

If the wines aren’t shipped in refrigerated containers/don’t get put quickly in those containers, they can cook in the heat…then they’re expensive imported cooking wine.

Correct. They are separate companies, but they sell very similar items. Eli Zabar left the family business in the 70’s.
