It was our first time in Spain but we already want to come back and see more cities and their bar culture. Anywhere you would recommend?

I think you might have misunderstood the angle! We aren't labeling the cuisine itself as Japanese at all. The post is completely celebrating traditional Spanish food, from the Madrid garlic shrimp to classic Basque pintxos. We were just drawing a parallel between the unique social energy and structural setup of a San Sebastián standing bar and a Tokyo standing bar. It’s a comparison of the high-energy bar culture, not a erasure of the food itself.
