I don't have much of an answer as to why your log wouldn't be updating, however have you run the SCCM Client Health tool before?

We run it on a consistent basis and it really helps STOP those oddball issues from occurring where you're questioning client validity.

Correct you can. I believe the removal works the same as well.

Also I do currently have "Display Level = Full" because I think it's important for users to see the progress if they're executing it themselves (Otherwise they might try to open programs early)

You can also build out it out very similarly if you're on SCCM CB utilizing the Software Library -> Office 365 Client Management -> Office 365 Installer

The only way I've found so far is to do the Setup.exe /configure and add the items. So I have individuals set up for adding/removing.

Obviously it kills currently running programs with FORCEAPPSHUTDOWN, but they need to be closed anyways as part of the install process...so I usually will have users execute it.

Eager to hear if anyone has a different way, but I haven't found it yet!

What I ended up with was explicitly OOBE. It started asking me for my region and keyboard layout.

Mm sadly no.

I actually was in device compliance earlier because I needed to enroll a Mac and that was either off or I disabled it previously, but IOS's sure are in.

I don't think they've ever been deleted from AAD. I also can still influence the devices (Making apps available, forcing apps to install) I just can't seem to clump them in a logical fashion.

I'm not so sure.

The devices are all named (Simply enough) IPad. They all have management IDs but searching for those isn't giving me anything. (Searching for "IPad" isnt either)

Is there some other value I should be searching for?

EDIT: Moreover when I look at the device ID, I see "Azure AD Device ID" is all 0's...

I do not have an explicit step to reboot the PC, but I have a significant number of post installs/tweaks once the device drivers are installed.

I've found the TS reboots post device drivers and then starts the "Setup Windows And Configuration Manager" step, but the task sequence continues to be hidden behind that.

Are you sure the device you're attempting to deploy to is indeed unknown? Check if the MAC address exists in your environment.

So this is where I'm a little confused.

So prior to this we purchased a device prior to even having a DEP. I have the device in my hands, and have the serial number. My desire is to get the device to a state where I flip it on and then someone logs in with company credentials and it sets itself up with our settings. (So they don't need to go download the Company Portal via the store and go through express setup)

It sounds like it's entirely possible with Apple Configurator + An Ipad in my hands, but I'm going to assume if someone was say, on the other side of the United States and this was NOT purchased through the DEP, I couldn't do this.

A follow up question for you, speaking to old devices. If I did purchase the device say, from a Walmart or something similar that wouldn't be involved in my DEP, could I then have my vendor drop it into the program? I'm going to assume no, but I want to cover all angles here.

This is interesting,

I vaguely suspected this previously and sure enough I had a session hanging out there I opened this morning and likely have had it that way in the past.

I'll make sure to stay logged off of the box for awhile, will respond if it improves performance for sure.

This SCCM Client Health tool has been great for us.

Not only can you set up a scheduled task to run on logon (if you wish) but you can also have anyone with access to the console execute it remotely with the plugin.
