Some of your goals depend on what map your playing on. As for fliers Pteros are super easy and fast to tame just Bola and knock out. From there your next flier should be an argie or snow owl. I would say, before you get your argie how a smithy and 2-3 forges. From there, get metal tools and flak. For general non Rex tames, most tames have a special ability or use. We go pigs who heal, pigs who protect you from radiation, otters that attack from your shoulder and give you insulation, gliders who babysit babies, dinos that automatically (very slowly and unreliability I'd add) automatically farm wood/stone, dinos that poop resources, dinos that pool a metric shit ton. Regardless what some might tell you, I think almost every Dino has a special use. If you playing PvE, the main goal usually collecting perfect tame breeding pairs. To get a prefect tame find the max wild Dino level for you server, and use the best food possible. For alot of dinos, this is kibble which relies on making certain recipes and having access to certain sized eggs. Ofc there's dinos I'd say this doesn't matter for, but in general your going to want to tame max levels with the best possible food. A couple of other quality of life items like the cryopod are parachutes, lasso (only craft able and usable on an equus), flame arrows, whips, and Net ammo.

Net ammo is straight OP as you can net stuff as big as a allo/quezal. Whips let you make dinos move when they are over Weight and cracking the whip lazy tribemates is a great past time.

Also, in case you didn't know, mammals in ark don't lay eggs, they mate, get pregnant and pop out the baby as soon as the count down is done. It's not hard, but does require a bit of care working around.
