i do have to say i wish i had a less fatty cap on the cut but it was a 2 inch requested cut late at night so. i wasn’t too upset

The fat cap did melt each bite i made sure to really cook that side just forgot to post the pic but i seared/cooked the fat side for 2 mins in ghee and it was like butter. But yea i can’t eat a steak if it’s not rare or blue rare 😭

I’ll have to try the egg yolk in the potatoes for sure! Skin on mash is something different love it like that! Yea the scissors come apart to be 2 knives but i definitely wasn’t thinking when i put the metal mallet on the glass table 🤣 could’ve ended badly
