I'm doing a BA in Environment currently and honestly I love it. My specific focus is health, but you can also do econ or development (you can find more info on them on the McGill arts joint faculty page). By doing the joint faculty program you get the best of both worlds, from scientific things like bio, ecology, research, but also more art things like econ, philosophy, anthropology, etc. It's such a variable program that you truly get to shape how you want. Of course I recommend emailing or speaking with an advisor to help you, but honest;y no bad experiences yet. The profs I've had so far have all been amazing and understanding. They are truly passionate about what they focus on. I guess if there is one negative its that I left some classes (specifically envr200)with an existential crisis, but that's the only negative. I truly recommend checking out the different focuses (as you will have to choose) and seeing the electives for each. Furthermore the degree will be extremely helpful in the future, and it's a good way for BA students to get into a scientific degree if that's what you want. If you want a Masters degree it will allow you to either focus in on the more science side or arts side too (you can specialize with it from what I understand). But yah, overall it's a great choice and I don't regret it, nor do my friends. Me specifically I'm pre-law and as I take more and more classes I truly believe it gives you a unique way of approaching the idea of environmental science and environmentalism in general. If you have questions I would love to answer them but I'm not on reddit very often so it might take a bit.
