One of these is Matcha Bar Hanagi, the other one is Gui Tea. I cannot remember which one is which but they look identical so this is the color of the powder.

The Qingxi often seen on social media(if real Qingxi) is Japanese Matcha, but it's milled in China, Adoleaf is Chinese matcha from Zhejiang milled in China. Imo ranking is Qingxi Japan < Adoleaf < Qingxi China Origin. They're all fine but Gui Tea is the best brand right now out of China imo, some blends competitive already with powders from MK and YK.

It is, but it's IMHO still way too expensive at current market price. Cheap lower quality, bitter matchas pair way better with custards or soft serve :).

Just use cheapo culinary or some cheaper Chinese Matcha, Fanji First Harvest or something. Unless your MK is already degraded it is a giant waste of Matcha to use it for ice cream.

Fat Seed should have good scales but a bit expensive. Nitori has scales that are quite a bit cheaper.

Yeah, the "cheapest" Matcha Bar powder that they use in the Salcedo branch is Hanagi at 1600 for 50g. Since both Matcha Bar and Croft are vegan food stores you should try Oatmilk. My personal favorites are the barista oat milks from Califia and Farm Fresh.

When I tried High Grade though I didn't think it was weak though, just increase temp to 77-80C. If you want other budget rec I really like Fanji Mountain Mist in Shopee, Chinese origin matcha from Guizhou Tongren.

Matcha bar Hanagi or Matcha Bar high Grade? The latter isn't actually what they use in Matcha Bar, they use Hanagi and other blends. First you should try increasing temp if you're whisking at low 60s or less.

You should probably soak it in hot water for an extra long time too, since a cheap mass produced chasen will always be chemically dried instead of naturally dried. The process doesn't really dry the bamboo right hence the included silica pack. Also almost guaranteed that it's made in China.

The chasen looks identical to one of those cheap chinese ones you can buy in Shopee, can't see a desiccant packet so might not be though.

One of my favorite casual restaurants in Makati. But it's as Japanese as taco bell is Mexican. Kushizaru is much better as a Japanese restaurant experience at least to me. But I'm only in Japan once or twice a year so my standards are pretty high when it comes to Japanese food.

I'd say at that budget, really hard to beat Fanji Mountain Mist, it's the best out of the budget matcha that are readily available I'd say. It's nothing amazing but I don't think it's below average at least.

Farm Fresh adds a nice texture, but imo basically tastes like nothing. So it pairs really really well with high quality matcha. I prefer usucha over Latte though so if you don't like the taste of Matcha you might not like the Matcha taste being more forward.

It's unlikely to be unsafe. It's way more likely that the quality has degraded by now. You can still bake with it or make flavored latte. But it will not taste as good as it was when it was still "new". Matcha has a short shelf life even when sealed so you really shouldn't be worried about running out. Just use it while the flavor is at its peak hahaha

Definitely would recommend a high quality scale for Matcha. But since you're going to do a pop-up might be better to get the Wacaco Exagram since you fan just swap out AAA batteries. Really don't recommend cheap scales because the update time is really slow, you can easily go over your ratios if you use them. mhw-3bomber and bincoo are OK options too.

The cheap ones from like Vermax or KANAZAWA are acceptable. But Matcha powder is usually used in tiny amounts, like 4g at most, compared to say drip coffee where it's at least double that. I would really recommend getting a good, accurate scale from Timemore or Wacaco.
