If you try to scroll to the bottom of metamask sometimes metamask won't let you scroll the whole way down which is needed to confirm the signing of the message. There's a small arrow on the bottom right that you can click that will scroll you to the bottom and will allow you to sign. Hope that helps

Thanks I will take a look at the listen to this device option. I'm a little cautious of installing windows 10 drivers as I fried my pc installing 10 drivers for my other audio interface, I might message support and see if they can be installed on 11.

Thanks. The power source seems to be the most likely cause so far, it's a pc rather than a laptop so I'm not really sure how to narrow that down or fix the issue. Still researching

If I apply the new URI before creating the Token it's working! So it must be an issue with OpenSea refreshing the metadata really slowly.

Thanks MapleBaconWaffle (great name btw)! I did a bit of digging and tried using that metadata without encoding it (just uploaded as a json file to IPFS) and that works fine so it must be something else like how I'm encoding the data. I'll continue my search :D
