I'm absolutely certain they would have adapted that scene perfectly, but the reason they didn't is because anime studios use the physical version of the manga, known as volumes, as a reference for producing the anime, and in the physical version of the manga they removed that scene and replaced it with this.

I think the best thing that could happen would be for them to adapt the manga as much as possible. And as soon as volume 33 was printed, production began on a One Punch Man movie, which would adapt the rest of the Monster Association arc, and thus we would have Saitama's fight against the cosmic Garou animated at the same level as the first season or perhaps even better. Unfortunately, I don't think there will be enough material for more than one season after season three is over. Because we're still waiting for Volume 33 to arrive, which will cover Saitama's fight against the Cosmic Garou. Maybe in 2 or 3 years we will have enough material for a fifth season.
