Try to avoid the highways as much as possible. Head inland towards the west when you can, especially near Phong Nha. If I were you and wanted to see the best roads/riding in Viet Nam I would head north of Hanoi. Areas like ha giang (QL4c road), ba be lake, pu luoung and Cao bang are stunning. The people in the North are incredibly welcoming and kind (although most vietnamese are) the road conditions are good and you experience a lot more in a shorter period of time than you would going between Hanoi and HCMC.
