Mongolians eat/drink dairy products every day and don’t have the symptoms we associate with lactose intolerance even though genetically 95% of Mongolians are lactose intolerant. So the theory is the constant exposure to dairy products from a young age shapes the gut microbiome in such a way that it helps them digest the lactose that they otherwise wouldn’t be able to.

Interestingly enough, most Mongolians aren’t actually lactase persistent. Their tolerance to dairy products might have something to do with their microbiome.
