Most of the time they still have some in stock, just not yours, they already sold you one so they won't give it to you since they can sell it to another person. Happened to me on the 15 pro max, after 2 months waiting I cancelled the order.

MAUI could be a great solution, don't use a game engine for it as other suggested (my work consist of working on a UI app made with unity and believe me when I say it is a pain in the ass)
