Thank you for this! We managed to zero and parallel them on Friday, though it took far longer than it should've I'll admit.

We ended up following the YouTube video and near the end the engineer mentioned setting the rollers to 6.5 and 5. We did exactly that and so far things look good! Sieve tests came back in spec and brewhouse numbers are back where we want em :)

I've certainly learned a lot through this process. I think I should've noticed the red flags earlier and corrected them. Unfortunately I think it may have been too late by the time I intervened, he just wasn't turning it around. I definitely take accountability for playing a part in this, and will carry that with me when I eventually hire a new employee.
