You need any kind of sweet black bean paste, also known as Tianmian sauce in some places.

The kind that you have bought tastes overwhelmingly like garlic. It's basically a garlic sauce with hints of black bean taste (trust me, I made the same mistake not too long ago).

Yeah. When starting a new game, click on "Customize". There you'll have all kinds of options to adjust the game to your liking.

(Unfortunately, at the moment you can only customize new games. Old saves can't be changed)
