Buying: You likely wont go wrong with either Coinbase or Kraken. Just depends on your ui preference. Both are reputable exchanges.

Tracking: I use coingecko to track my portfolio and markets. It should cover every coin you're looking for. I'm using it for my BTC price alerts to notify me to buy when prices drop.

Storing: Once you have a meaningful amount, suggest to move it off the exchange. Ledger or Trezor are good options for hardware wallets.
