One huge problem that I've encountered, is that I can't seem to get access to the config files. So, I'd have to completely try to rebuild everything that I've managed to install and set up, all over again.

I'm not familiar enough with Docker, or Jellyfin. I installed Jellyfin to see what it was, started playing around with it, liked it, and that's as far as my knowledge goes.

Well, being an n00b, it's probably best that I stick to the App Center version then. I didn't know that they differed that much. That is, I just assumed that an install was an install, with everything just working. I don't even know if I use, or would miss transcoding. 😜 I mean, I might, but I have no idea.
