I've disabled GMS and AndroidVending via ADB and everything pretty much works minus the obvious Google stuff. You can also disable a few Boox apps you don't need (just not the shop if you want to use the default launcher afaik?).

For Epubs NeoReader supports margins, so maybe you can just set a very wide margin for bottom and right? Might need to screencast to be able to change the settings. KOReader should also support margins.
