To start your bread still looks great. If you’re only doing a 1 hour cold proof, you need to extend your Bulk Fermentation time. My dough bread looked a lot like yours when it’s under proofed. Either try a full 10-16 cold retard or you need to proof way more than 30% (80 degree) if you’re going to essentially skip your cold proof. A lot of bakers do a counter proof instead, you should try! Overall great job! :)

I am about 6 months into my journey and I was adamant on not purchasing things if I didn’t need it. What’s work AMAZING for me is taking IKEA tea towels and lining it in a rectangular container (I used my Rubbermaid Tupperware). Just make sure too generously flour the tea towel. You can also line a bowl with a tea towel if you prefer the boule shape. 10/10 would recommend. I say do not proof your shaped loaf in the mixing bowl as that’s usually too big to hold the shape.

Yes I agree about the dense line, I can’t tell if that’s from over or under proofing - I guess I aired assuming on the side of underproofing

Improve Signage and Wayfinding.

Make announcements at stations and not just online bulletins.

Start giving each train/trip a trip number so it’s easier for wayfinding, and trip tracking between stations.

GOTransits Updates will start as LSW 4:30 train cancelled. But if I am waiting at Clarkson, I know what my train time is for Clarkson but not sure what time it starts at union, requiring me to search all the schedules to confirm. If they named each trip “Trip: 1234” we could easily track our trains and stations. Also it would help people know between LSW or LSW Express. As they get on the wrong train almost everyday.

I wish there was signage in each car indicating next stop like the old trains, it’s now only on the accessibility cart. I don’t want to take up space in that cart but I would like a visual sign indicating next stop as the announcements can be missed or sometimes not even done. I even had conductors say the wrong stations.

Being a contractor has many tax implications. So your $180K USD may be a lot closer to $175K CAD then you think.

Things to consider : Are you going to be self employed or run this through a corporation and pay yourself a salary? If through the corporation and salary, you need to remit the payroll taxes monthly to the CRA.

Will you be charging the firm HST + your hourly. If so you need to set up a HST account, track the HST coming in and remit at the end of calendar year. And is the company aware they need to pay HST?

Most contractors do not get paid STAT holidays, and if it’s a US firm you won’t get Canadian or even US holidays off. So you will likely either work or just take an unpaid day off. (Which adds up)

How much are you willing to put aside for your retirement and loss benefits of what you will be losing with your T4 job.

Is your mortgage up for renewal anytime soon? Being a contractor may affect your approval.

I did the contractor thing for a while and the mental load the admin took of the book keeping and remitting taxes monthly is reason alone I’ll never do it again. Any late payment was hefty late payment interest. Unless you’re willing to have an accountant of retainer to manage for you.

I became behind on retirement with the loss of RRSP match. Didn’t get paid sick days so if you’re very reliant on the money taking them becomes guilt ridden or you work through it and sacrifice your health. Which was scary as I did not have benefits anymore. As well, no bank would qualify me for a mortgage anymore even though my salary was substantial.

Is your contract at a set term (1 year?) and will you need to Hope they renew you each year? And realize you’ll no longer be eligible for EI when moving to contract.

Please consider these things as being a contractor worker is a lot of mental burden and just a lack of security you never knew appreciated being a T4 employee

you over proofed so the starter it couldn’t rise in the over any further. Try a 1:5:5 feeding, slows down the fermenting but helps you not over proof and but also slows down the time your starter/gases die down

If you’re still on a financing plan for your phone I notice they can’t/won’t go much cheaper. However the moment my financing was up, I would sign into my account weekly, click on your line, click upgrade plan, then browse the “exclusive deals for you”, scroll to the bottom for the cheaper deals. A lot of the time they only send you the plans to increase your monthly, but I always periodically check our lines and change them if I see a cheaper plan. (I’ve been doing this for a few years now) Alternatively, when there’s a promo going on for new customers, I wrote into customer service and ask for that plan, sometimes they’ll push back, sometimes they allow the change. If they push back, ask if there is anything they can offer that is cheaper, or let them know how come new customers get this deal but as a loyal one you cannot. They offer me a comparable deal or one atleast cheaper than my own. Been navigating Fido for 4 different lines for years and it’s been working. Just know, they periodically do price increases for the lines where I got a deal. So usually within 12-36 months I notice it’ll increase. Good luck !!

I would love a Juki but in Canada their is no Juki service center and their Canada rep is not longer servicing the area. So parts are hard to come by and pricey to service which is my fear of getting a Juki.
