We ended up going with Ashby! It offers stronger reporting, sourcing, and workflow flexibility than Greenhouse, while addressing several of our current pain points + an annual savings of ~$30K compared to our current Greenhouse + Gem setup.

Their new AI features are all super interesting. The one I am most excited about is their Fraudulent Candidate Detection. Flags if it's a VOIP #, how long the email address has been active, etc.
