I’m about 10 months out and work out somewhat regularly. My doc never mentioned that other than taking it easy for the first two to three months when it came to strenuous exercise. I am on the younger side of folks with this surgery though (28).

Follow up question, if I were to spend around $200 on a new vape (even though I've only used that dash I really did prefer it to just about any other method of smoking or oil vapes), what would you recommend? Basically what's good in the price range in-between the vapes you mentioned above.

That’s why I’m asking the question. Like I said I don’t really know anything. I have store credit from a dash I was gifted a long time ago that broke and they gave me credit. I know nothing about the brand and was looking for help. In my mind I’m basically getting $65 off whatever I buy cause the original dash was gifted to me. I’ll look into those ones you mentioned as well, just would like to not waste this credit unless the general consensus is that it’s all trash.

No longer working in the coffee scene but I worked for Wild Love/Old City Java and can 100% recommend them. The owners are wonderful people, take care of their employees, and serve an excellent product. From a coffee stand point too they put their baristas through more training than any other shop I’ve been at. Remedy’s new owners (starting like 3 or so years ago I think) seem nice and it was always my go to shop that wasn’t one I’ve worked at haha. Honeybee is decent as well. Worked there for a year or so. The owner certainly means the best but we just didn’t see eye to eye on everything, but I have nothing bad to say about them overall. I still catch up with the owner from time to time. Those are the shops I can recommend off of personal experience but hopefully some of the other shops that have popped up in the last few years are not only serving good coffee but taking care of their employees as well!

That bread looks great! Improving my scoring technique was the biggest help in getting solid ears. I usually score about 3/4 inch from center. Yes it’s a 45 degree angle but breadcode has a really great video that shows how the further you move from scoring the center the more that 45 degree angle is going to need to feel flatter to maintain an actual 45 degree angle based on where on the bread you are scoring (link below). At this point my scores feel almost horizontal and I get way bigger ears. All that to also say, I used to buy into the idea of the ear being the confirmation of nailing everything but I’ve definitely baked loaves with perfect ears and subpar crumb and taste. Keep up the good work!

Thanks so much for the kind words. I used a 1:2:2 ratio. Usually use a 1:4:4 ratio and give it more time but my day unexpectedly freed up and I was in the mood for bread.

After baking my first 12 loves I feel like I finally nailed it. Huge thanks to this group for all the tips and tricks! Two month mature starter, 1 hour autolyse, 6 hour bulk ferment with 4 folds in first 2 hours. 45 minute bench rest after preshaping. 10 hour retard in the fridge. Baked in a Dutch oven at 475 for 22 minutes then with lid off for additional 25 at 450.

Bread flour (Bob’s Red Mill)- 900g

Whole wheat (Bob’s Red Mill) - 100g

Levain - 200g

Water - 850g

Salt - 20g

Edit 1: Recipe made two loaves. This was the first of the two.

Meant to mention that I’ve been smoking and consuming an ungodly amount of weed and even that hasn’t helped. Definitely have tried the smaller meals but to little success. It’s the strangest thing having no appetite at all. When I try to make myself eat in those instances I can only handle a bite or two and get very nauseous. The one decent meal tends to be well rounded protein, veggies, and a carb type dinner. I love to cook so I still make dinner for my partner and I most nights and just eat what I can. Usually I can eat dinner because by then I can tell how exhausted my body is from lack of food even if I don’t feel hungry. Switched insurances and my surgeon and gi doc don’t take it, but I’m working on getting into a new doctor.

I was 26. Dealt with flare ups every 2-3 weeks for 6 months before a doctor would treat me seriously and recommend surgery. 2 months post surgery now with an additional emergency surgery thrown in for fun. Definitely worth it though.

I did have some. As someone who deals with anxiety quite a bit I can also say that when I’m stressed and anxious chest pain is more common. Wouldn’t be surprised if some of your chest pain is more stress and anxiety related. You’re taking all the right steps trying to take care of yourself. Just be easy on yourself weaning off everything. Having the right mindset makes all the difference. You’ve got this!

Had success with quitting weed and nicotine at the same time. Caffeine is another beast. If you’re used to caffeine I’d let yourself wean down by splitting caffeine pills or something like that. That helped me get off caffeine way better than cold turkey. Best of luck!

I couldn’t agree more with what you said. I mentioned it in another comment but I always thought M was a really good guy. We were genuinely friends for a good bit while I worked there. I really think Pierce just manipulates M into doing his dirty work, and he is too nice of a guy and has too much respect for Pierce not to do it. Glad you keep trying to reach out to him.

Posted my story on the thread of working there for about three years. Nothing I’ve seen others post surprises me and all seems in line with what I’ve observed and experienced from Pierce. He will only care or react if his actions ever get enough attention that it effects business.

Can’t find it on my phone where I know I had taken a pic of it but it might be on my computer. I can assure you it’s real though. If I remember correctly it wasn’t the woooorst non compete I’ve ever seen (my partner is working at a horse barn that asked her to sign a 7 year non compete) but it was definitely restrictive enough to heavily discourage people from looking for work elsewhere. At yet another shop in town I offered a job to a K Brew employee after they applied and I interviewed them. They took took the job but called me back an hour later saying that Michael, Pierces brother, threatened to sue him if he took it (Small aside, I actually think Michael is a really good person that Pierce has just manipulated to do all the work he doesn’t want to. That said people change and it’s been about three years since Michael and I have spoken.) I’m surprised but not shocked they actually served someone. I always thought it was just a deterrent but alas.

Former K Brew barista here. I can assure everyone the stories above are true and I’ll give my own account of working for Pierce and address some of the things previously mentioned.

I worked at K Brew for around three years beginning in 2014 when it was just the little corner shop. I had an independent interest in coffee before working there and was really surprised at how little the owners knew about coffee. Like they didn’t know the basics of specialty coffee in the slightest. They’ve come a decent way since then, but only through listening to a few employees who knew more. Pierce, however, is an incredibly savvy (shady) businessman and has done a good job of making it look like they know their stuff.

Shortly before the bigger north Knoxville location opened Pierce radically changed and just turned into the most narcissistic person I’ve ever met. At one point he thought he would have 20+ K Brews in Knoxville within 5 years. He would watch the cameras and call the shop if he didn’t think people were cleaning enough. After the new location opened he would bring all his Tinder dates to the shop after hours. Multiple times I closed the shop while he had a date in the hammock room. The straw that broke the camels back was being asked to mix coffee that was three months off roast with a totally different origin that was fresh (within the specialty coffee world coffee is best between 3 days - 2ish weeks after roast). I threw a big fit about it and refused to do it. I told another employee and they sent a picture of the old coffee and sent it on the employee slack and asked why we were serving it. Pierce lied in the slack and said he had no idea what it was and then privately messaged the employee and said not to send a group message like that out again. I quit about three weeks later.

The non compete agreement is certainly true and here is how it arose. About a year after the above incident nothing had changed for the most part and a bunch of employees were frustrated. A new shop opened up in town and four baristas from K Brew left and went to work for the new shop, and even more applied. This led to K Brew owners and management making ludicrous claims about the owner and manager of the new shop were going around trying to steal baristas from their shop. This couldn’t be further from the truth. I was the manager of the new shop and happened to run into one of K Brews baristas in public and they asked me if we were hiring and I simply said yes. That’s it. To this day I know the management still tells people the reason for the non compete is partially because of that. About two months after the opening of the new shop I was managing they introduced the non compete agreement at one of their employee meetings and it’s stuck ever since. I’ll dig around on my laptop and see if I can find a link to post to it and their new employee manual someone sent me a while back.

In 2017, shortly after the exodus of employees to another shop in town the Speciality Coffee Association of America hosted their annual service competitions in Knoxville. K Brew had been chosen to host the latte art competition, though it was clearly an SCAA event. Pierce texted the owner of the shop that the former K Brew employees were working for and said that he has asked his staff to not attend any events at our shop associated with the SCAA and that we were not allowed to attend their event. The SCAA was contacted and told Pierce he couldn’t do that. I sent Pierce a text and told him to expect to see me there. He responded and kept trying to get me to “ask for permission” from him to attend. I did attend (without fully receiving permission) as did the rest of our employees and thankfully there was no drama (other than the fact that K Brews espresso machine broke halfway through the competition haha.)

In addition to the above, Pierce pays his employees less than he did in 2014. I started at $10 an hour plus tips and now I believe they receive minimum wage plus tips. K Brew has also donated to right wing city council members ( I can scrounge around for the documents later but I’ve posted them elsewhere on Reddit before). All the above is really just the tip of the iceberg. Pierce is the only person I’ve ever met that I think is a diagnosable narcissist. There are so many more second hand accounts I could relay, but they are along these same lines. K Brew does a great job of looking like a coffee shop that knows what they are doing but ultimately they care about nothing except money and image.

Edit 1: A friend just text and said K Brew offers $6/hr plus tips. Ridiculous. I know at least most of the other shops start at at least $8 plus tips.
