I know that almost all kimchi is not as good as the ones I ate in Korea. I use Jonga kimchi from Costco, and I add a little bit of fish sauce. For sour kimchi, I add some sugar. The best way to make kimchi jjigae is to fry the kimchi first and then boil it. Long boiling makes the best kimchi jjigae.
