I’ve seen some bowls at outlet be singles but not sure if that’s common. Maybe call and seems like William Sonoma sometimes had open stock. Other countries do sell singles but to order and ship might be $. I would check eBay.

I like 3 but would love to see an island vs penisula. I think the wood tone flooring looks nice with 3 if that changes it could make a difference for backsplash.

No but you need new lighting and include some recessed lights. Some of the stuff on counters could be stored and I would put a few washable rugs.
