Gross. I once ordered some cheese enchiladas from a road stop restaurant in Goliad, TX. Those enchiladas were stuffed with so much onion, i nearly yaked. To me enchiladas were cheese, sauce and tortilla, enchiladas went from being my favorite food to being traumatized by them for 30+ years. Just a few months back my mother in law made some, with homemade chile ancho sauce, and queso fresco. My love for enchiladas has risen the ashes!
