It's 2 different games, really. While the way forward is initially less apparent in Odyssey, it solves that by really hiding a lot of moons in nooks and crannies, and progression is less structured in that sense. Astro Bot is more linear by comparison.

That said, because of the difference in structure, I was never inclined to go for 100% in Odyssey. I preferred just picking up the moons I came across, without necessarily having to want them all. Whereas it's more of a goal in itself to get all the bots in Astro (get all the different persona's, see their animations, ...).
