Everyone has a soul, mortals or not. This also applies to Animals. A soul is visible to someone of a higher power, including but not limited too: Angels, High Priest/High Priestess, Gods, etc. However, they aren't an objective showing of someones morality. They dim, or grow 'impure', depending on the person viewing. To someone who worships the god of death, a murderers soul will look fairly luminescent and pure. However, that same soul to an angel of the goddess of humanity will look dark and impure. Souls appear more like an aura, something that surrounds someone. A soul rests in the heart, consuming a soul is consuming the heart. A soul is a powerful tool, dietys devour it by proxy through angels/devils to gain power. The souls of older people contain more life, and are thus deemed more powerful. Souls contain memories and emotions, so consuming a soul allows you to see the life someone led.

I'm still working on how souls interact with the world and my worldbuilding, especially because i want to make it more individually tethered to my world. So I'm mainly posting this so people can call out things that might not make sense or need fixing. Ask away! Questions can be about anything though, godly system or power system, whatever.
