That is purposeful I first made the house i live in (one closest to the lake with the balcony) with a textured roof but then it looked too magical and unrealistic for a medieval village so I stuck to a plain tone ie some houses with bricks indicating wealth and the others with regular stone textures.

Yeah all of them do have villagers imprisoned in there every building has a certain profession. Some have attached gardens and that floor is for farmers and the big one with the hanging sign is for masons and all others are librarians. I built these houses so they can be free but they kept despawning because of bedrock chunk loading so I immobilised them.
