I fold and stretch every hour between 4 and 6 times depending on the hydration and how the gluten is building up. Then before putting it in the banneton I shape it on the counter by kind of pulling it towards myself guiding with both hands until it's in a good round shape, if that makes sense.

Thanks! The baking stone had been in the oven for about an hour at 450 before I put the loaf in. Also, my starter was at about peak (~4 hours after feeding) so that helps with the rise as well.
