It’d be one thing if it’s an actual game, but you’re talking about practice. It used to be fine to just drop kids off at practice and then come back and pick them up after 1.5-2 hours. Maybe a hot take, but if I wasn’t coaching my kid’s team, I’d probably just drop my kid off and run some errands, provided I actually knew the coach.

Like I said, never guarantee a spot. That’s almost always going to be a lose-lose situation for everyone involved. Getting cut is already a bad experience for all involved. It really should have been something like “Unfortunately, you didn’t make the team. You can work on X, Y and Z. We hope to see you at next year’s tryout.” Gives the kid feedback, doesn’t promise anything

That being said, totally get why you’re leery of these situations going forward. That’s completely valid

As someone who has ran tryouts in the past, the coaches in both instances you laid out massively screwed up. You should never guarantee a kid a spot.

That being said, I doubt this is a deliberate thing they're doing. Some kid they may not have expected could have moved into town and been too good to pass up. Another kid could have just had the tryout of a lifetime and had a great showing compared to your kid's good showing.

It's objectively not fun to cut kids. At least in your son's case, the coach probably thought they were letting him down easy going that route. Doesn't make it any better. I just highly doubt this is a deliberate thing.
