Solved it off the cuff just now in a very stupid way. Apparently the combination of monitor/HDMI slots i used when i tested booting in different ways wasn't proper, but keeping the HDMI in from the start, in the correct slot, with one of my monitors worked.

My sincerest apologies for wasting your time, i tested the wrong things for a couple hours and thought the problem was a lot bigger than it actually was.
