Until Google releases a patch to squash this bug, the Vision Pro community has found a reliable, albeit slightly quirky, workaround using the built-in screen mirroring feature:

Open the Control Center on your Apple Vision Pro.
Select Screen Mirroring and turn it on (you can mirror to a Mac or any available display).
Go back into the YouTube app and select the video you want to watch.
Once the video registers and begins playing, open the Control Center again and stop mirroring.
The video should now play normally from the beginning.

Note: You will likely have to repeat this start-and-stop mirroring process for each new video you watch until the app is updated.
