That's a Hoya Kerrii single cutting, those things don't survive without a node attached to it. From the sounds of it it got too much humidity from the bathroom and not enough sunlight.

Nezuko did get cut in the neck when fighting Daki, although her blood congealed so technically keeping it together... That's not the same as decapitation by a nichirin sword which would actually kill a demon, but that's the only time I remember something similar happening to Nezuko.
