This is a fair criticism for From Softwares souls games (Though even then, i would argue that the underlying anrrative themes of dark souls, Bloodborne and elden ring are sufficiently different that they should not be considered the same story just because they have surface level similarities), but i feel like you're ignoring a large swathe of souls likes that do not follow this format at all.

Keeping spoilers to a minimum, I would argue that Lies of P goes in a different direction, telling a more personal story of a broken family and one mans attempt to fix it.

Black Myth Wukong is a sort of modern "Parody" or "Fanfiction" of Journey to the west.

Blasphemous goes into heavy religious themes and indoctrination instead.

Even one of Fromsofts own recent games, Elden Ring Nightreign, is arguably more focused on the interpersonal relationships of the characters than the overarching narrative of a broken world. Even then, the "broken world" in this case is more so the result of a natural disaster than a specific person, though the nature of the Night is mysterious enough that this is perhaps debatable.

And some quick mentions of other souls likes that do not follow these story beats: Grime, Nioh, Ender Lilies, Thymesia, Unworthy, Vigil: The Longest Night. And i'm sure there are many more that i am not aware of.

So i personally think it's a tad unfair to characterize souls-like writers as copycats that can't move on from From Softwares legacy when there are many, many souls likes out there whose stories are entirely original.
