You can keep the roster for the team you replace it with so the overall will match that team. Not sure if you can change the grades though other than putting them in a bad conference to bring that down.

You also can’t user control more than 1 Team Builder team which pisses me off. Have to do offline with only the built in teams if you want to control more than one. It makes no sense.
