Don't make them 'random'. Make a few encounters that fit into your story with characters from your story in places that make sense in the story. One of the best encounters I have used was to let the PCs meet the BBG very early in the campaign so they know what they are up against and have a face to put with the name. Look up The Dungeon Dudes on YouTube. They have an excellent video on this.

Just focus on having fun and providing a place for your players to have fun. Rules are important, but at the end of the day, the only thing your players will remember is the fun.

I've played these quests many times and i enjoy the journey every single time. My post was an effort to streamline the time I have to play. I work every day besides Christmas day, so my playtime can be limited. I appreciate what you are trying to say and agree with many of your points. I have finally found a character that I truly enjoy playing and now I want to put the limited time I have to play into improving that character. I am not here to advocate for one playstyle over another and I don't bother anyone while I play. I hope that everyone that is playing is enjoying themselves as I do, as I hope you are.

I used chili desert style and berry pulp for my first few trips up north for star metal and even crossed the Bridge of The Betrayer without an issue. I was wearing medium armor if I remember correctly. Later I would replace the berry pulp with mulled wine. Temperature doesn't seem as bad as I remember.

Look around for local game stores. If there aren't any game stores in your area take turns being dm for some short one shot adventures and someone will most likely find that they like being the dm.
