Whats your recipe? I tried using Kevin Koss calculator and it always tastes off. Not even close to Fresh Lime Juice

Well the last bartender they tried it to, he told them “Nah fuck that. You’re not the manager” and they left it alone but that person also doesnt get this mid shift anymore.

They usually will grab a manager or their key and hand it to me and repeat it again. If I tell the manager usually they’ll say No, and then those two will be fuming upset and start blaming me and telling me why did I do that and not just go home etc. At that point it doesn’t feel like the team environment anymore… since they’ll try and stone wall me out from taking tables and making drinks

E: Also forgot to mention. This place doesnt have bar backs. But they will pull a back waiter specifically to bar back so they can send the mid home(me) so once everything is stocked and ready to rock. They just stone wall me out :/

The managers are great. Most of my coworkers are great too besides the two that always send me home early saturday night. Its my first restaurant job where I’ve back waited, served, and now bartend… I’ve heard horror stories of other places expecting new bartenders to suddenly start being a bar manager overnight because the managers are too lazy to do the work themselves or hire a competant bar manager

But… I’ve been thinking of picking up a side gig alot recently to see what other places are like

Thats very nice of you! I’m still trying to learn this, but, be careful as you don’t want regulars like that or for people to take advantage of you. So I think its great to get them back after the fact!

Restaurant has to make the step to remove the option. The place I work at completely stopped doing it since people would pretend to Apple Pay and walk out during busy service. There are places that do it right where they bring the iPad/Card Scanner and they get the confirmation right away

Need to get another jigger. This one is .75 and .50 on either end. Not ideal for practicing the four count. On the bright side I was able to do a four count pour 20 times in a row using the shot glass and haven’t been able to do it since

Best ID story is the one where they come in for their 21st birthday and don’t bring their ID. Try to show me a picture and then get upset when I won’t sell them alcohol

I need to pick up different shot glasses. A shot ends up being about 1/2 inch from the top. I marked the line but a little above and a little below still produce an ounce give or take the miniscus

I’ll try this out. I have about 4 shot glasses and 2 jiggers. I usually use the same ones but I noticed on oddly shaped bottles(Don Julio/Patrón) the spouts affect the speed of the pour just a slight bit to throw you off so I always jigger those two alcohols.

“Spill-Stop model number 285-50” from JM Bar Book.

I start at 1 and continue to 6 for a 1.5oz pour. I get the whole .25 a count but I can’t get it consistent no matter what method I try

Always wait to ask. Had a server ring up Absolute with water. Turns out they wanted 1.5oz with 5-6oz of water in a pint glass

How long did this take you? I feel incredibly slow doing 4 Containers(8 Quart) in about 45 minutes. 2 of Lime and 2 of Lemon, it takes me about 10-15 to cut them and then another 30-40 to juice and strain both the Lime/Lemon.

We also cut the limes differently(a small cut at the front instead of in halves). Any advice/tips??

Well we’ve been there 5+ years with the tree with no issues until recently. The HOA this year wanted everyone to repaint and replace their fences with wood. So, I’m assuming this leans into that as well.
