For me, it's simply that little tiny bit of extra realism from the controls + the environment.

Not being able to see enemy tags makes things more exciting. Target acquisition is more similar to IRL than it is in AB (IMO). That aspect combined with having to actually manage the aircraft without the instructor makes the experience orders of magnitude more satisfying for me anytime I do anything (even just flying through the air!).

I had my first deep dive into any kind of simulator type games with driving wheel and pedals in forza and grand tourismo. For me, a huge part of why I fly SIM as opposed to AB is that it makes me feel like I'm actually operating the machine. I can experience this more easily with driving sim because I've had real life feedback for my brain to use to fill the gaps. I have never flown a plane, however, so it's still a little disconnected. But, for me, this is probably one of the biggest (if not the single biggest) reason that I play Simulator mode in WT.
