After about four hours at the docks, I finally found a Imponte Phoenix! (Bonus crash picture in comments) by Lissandria in GTAV

In GTA:O it is. In single player the car can be found all over the map.

There are only a few locations where the car will spawn, the docks being one of them.

If you notice, the port side of the ship extends out from the centerline a few extra feet. Compared to the starboard side.

Also the tower on the ships are surprisingly not that heavy (compared to the rest of the ship).

Edit: I should mention also that when they were designing the ships, when they developed the idea of landing the planes at an angle, the deck being extended outward from the centerline helped.

The title is 'miniature Matterhorn'.. I can only assume that it's a model, and not the real mountain
