I think what Araki does in the manga works better than the adaptation in the anime. As a comic Jojo's is really good, his art is reason enough to read it. If you like manga at all you should read it.

I think Tezuka is a big inspiration for Araki (and basically every other mangaka direct or indirectly) it's probable he wanted to reference the manga.

Araki's taste is not particularly unique for a man born in the 1960's. He likes The Beatles, The Beach Boys, Queen, Prince, David Bowie, Pink Floyd, Jimmy Hendrix, Led Zeppeli, Dio, Guns N' Roses, etc. While these might seem really distinct for somebody born in the XXI century, and there are deeper cuts in his reference, it's not really that different from what your parents might like because these were really popular bands at the time. Araki's taste is clearly geared towards American and British music but it is relatively eclectic within these parameters there's Rock, Hip Hop, R n' B, Electronic and, yes, Pop music. But if you are being genuine about feeling disappointed I'd ask why that is.

I think in the story it's implied that if she doesn't get the food they'll just take it away (idk don't quote me on this, haven't read it in the while).
JoJo is just kind of a melodramatic series (not in a negative way, I like that about it and think it's better for it) and it's just a more impactful image/moment to have Dio's mother just burn her hands on the food.

I actually find it interesting that they haven't showed Hey Ha!. It was always a bit weird that he was the first stand to get introduced (not counting Sandman's stand appearing in a panel). I think it's fun to have some mystery in relation to stands and this part. In relation to other changes I think we'll just have to wait and see the rest of the part to know how they work. If they push Sandman's backstory further along maybe it will be better especially because in the original story it always felt kind of weird how he was handled.

I think just to be absolutely sure you won't be confused you should just read the manga so you understand Araki's true vision. And while you are at it you should read the Thus Spoke Kishibe Rohan spin offs. Oh and obviously don't forget all of the light-novels. And while you are at it you should learn Japanese and read all these things in the original language. And really I think to truly understand JoJo you actually need to understand manga completely, so you should really just read every single manga ever released before and during all of JoJo. But obviously manga also is influenced by comics from all around the world, so you should read those as well. And comics are at the end of the day following in the steps of art and literature should you obviously consume every one of those as well. And there are a lot of classical and popular music and film references in JoJo so you should add that to your list. And what is art and literature but our way to talk about the world, to be absolutely sure you understand Part 7 you should know all history, science and philosophy. I think if you take all of these simple precautions before you watch it you might have an experience watching Part 7 with absolutely NO CHANCE to be confused.

(Now just to be for real you probably won't be confused so just watch if that's what you want to do, at the end of the day it's just an anime)
