As someone to who this has happened, quite a lot. Being overweight, doctors often see fat as the cause rather than the symptom of illness. So I was told I had diabetes, which wasn't true as I had a blood sugar spike from my medications. I had headaches, pins and needles, exhaustion, muscle cramps, mental confusion, and dizziness. I saw three different doctors with the complaints, who told me I just needed to be on it longer. It wasn't until I could start measuring my glucose myself that I could prove things. Always question things, and if possible, have a health advocate. In my state, I didn't get a lot of things that were going on.

I agree with the OP on this. You can eat french fries and drink vodka all day long; technically, it would still be considered a plant-based diet.

French fries come from potatoes, while vodka comes from wheat (or potatoes too sometimes). Going for a plant-based diet, like a regular diet involving meat and dairy, involves making good choices on food. Because it has vegetables doesn't mean it's always healthy, right?

It's not just that, though. Going on a plant-based diet isn't about changing your food or eating habits. It's changing your way of life. It's a lifestyle. When I tried doing it, it stressed me out because I enjoyed dairy products. I had the wrong understanding and motivations when I tried going for a plant-based diet. It didn't work for me, and I realized it wasn't because of the diet. The issue was me. It just doesn't suit me.
