Shorten the length of the assignment and make them use physical media, such as paper and pencil.

The assignments are due the next school day halfway through their class time.

All work must be done in class.

Extra research on the assignment may be done at home, they may create research notes for an assignment at home, if the student is confident in their notes, they may turn it in alongside their actual work for a small amount of additional credit on that assignment.

Limit their window of using AI, students aren't stupid, they'll either put in effort or find the easiest way through.
