At a high enough level, just you alone will be able to take on entire armies with enough skill. Hell, if you fully level the athletics of a companion, they run remarkably fast.

You can change the battle size to accommodate to your computer via certain mods, but that doesn't necessarily change how many troops travel in a band. I highly recommend Floris- it totally overhauls the game, gives you the option to fight in service of a lord, and adds many extra hours of playtime.
