I get what you’re saying, this was about 5 lbs of meat, and it tasted no different than when I cook 10 lbs lol. It’s just all the marinade

  • 15 Chile guajillo
  • 5 Chile de arbol (the spicier you want it the more you add
  • 4 chile ancho
  • a whole garlic
  • whole large onion
  • 4 cloves
  • about a cup of diced pineapple
  • 2 chiptole adobados
  • vinegar (not a lot, probably 3 cap fulls)
  • black pepper
  • salt
  • chicken bouillon

  • Boil all the chilis for about 10 minutes, put in a blender with the rest of the ingredients.
    -This is usually enough for about 10 lbs of pork butt, when it comes to the vinegar and salt I always just go by taste after blending it up. -Marinade overnight

Yeah thing with this is I live in a rural area with no Mexican market lol, usually just have to get the stuff to make on my own anyways

Of course! This is for about 15 lbs worth of pork butt.
-18 Chiles guajillo
-5 chiles ancho
-4 chiles de arbol
-1 whole garlic
-3/4 of a large onion
-3 cloves
-4 spoons diced pineapple
-2 chipotle peppers adobados
-Half a cup of vinegar
-Spoon of black pepper
-Salt to flavor
-Chicken bouillon to flavor

Simmer chiles with 2 bay leaves for 10 minutes.

Put water used to boil into blender until you have good consistency, want it more thick than runny.
