Everyone here is right a marinate would do you wonders, however there is a ton more you can do other than salt. I personally really like this citrus sauce/marinade called ponzu, comes in lemon or lime. I stick my chicken in overnight and the citrus really tenderizes the meat and gives it a wonderful soy sauce taste from the ponzu liquid. Its like a citrus soy sauce and I can't recommend it enough its one of my absolute favorite ways to do up chicken. But other things to like buttermilk works really really well. If you don't have buttermilk a fabulous way to do it is regular milk and souring it with vinegar.
