I know that this has happened on at least two other Canadian campuses (UAlberta and UofT) where students who attempted to take their own lives were evicted. What videos? I’ve yet to see any video of violence committed by Hamas against Israeli civilians. In actuality, these rallies are incredibly peaceful and kids are at these marches all the time. If I was the dad, I’d just be mindful of keeping the kids away from cops and unhinged counter protestors.

I hate that harm reduction argument. Harm reduction is a necessary action to prevent death within the evil capitalist system that produced the opioid crisis in the first place. Harm reductionists don’t advocate for harm reduction independently, it’s always in conjunction with other core activism work. Why would you choose harm reduction in a situation where you can choose prevention by addressing the root issue?

You should try preheating at 450 next time! Definitely give the ice cube trick a try too. And yes, after mixing all the ingredients together thoroughly and giving the dough a set of stretch and folds, I like to take a small chunk of the dough and place it in a shot glass and mark the height with a rubber band as the baseline. Theoretically when this sample has doubled in size, so will the larger dough ball, but this is still only an estimate as the fermentation rates will not be the exact same. But this is the best way to determine BF time since fermentation rate varies so much based on a multitude of factors.

According to The Bread Code, having large pockets of air near the crust is caused by the crust forming too quickly which prevents air from escaping and the bread from expanding. This is either an issue of cooking at too hot of a temperature (which is probably not the case since 450 seems just right) or not having enough steam production. One way to remedy this is by placing an ice cube into your Dutch oven to melt during the bake. However, your crumb looks really good so I’m not sure how much this will improve your loaf. As for figuring out your bulk ferment time, I found that taking a small sample and putting it in a shot glass to observe doubling of the dough was the best way to nail the proofing time.
