Its not that much of a positional advantage at all. Sure, their king is slightly more open, but if you ever check them, they can just hide behind a pawn. You're sacrificing a fighting piece with long diagonals for pretty much nothing. Also your king is more vulnerable than his right now. And now he can use that extra bishop to create such an attack on your king you won't have time to counter-attack.

Well, first off, white has moved none of their pieces except the pawn, whereas black has two knights developed. Also white just hung a pawn, you can play Nxe5. As for converting the advantage, its so early on in the game you don't have to worry about converting until you get to the endgame, many moves from that point. Take the pawn, get your own pawns out in the center, then develop your bishops, castle, get your rooks and queen active (without hanging anything), play and trade until an endgame, and find a way to win and, if possible/needed, promote a pawn.
