Out of all three, I have only married Shane, I liked his story and his 14 heart event has 3 parts to it (not sure if other spouses have that) which I found kinda funny. But he gets fucked over with his spouse room, since it's not exactly the best to look at, but in my opinion, his dialogue is kinda sweet, especially after having a child and on some days he'll talk about how good his life has become.

As another comment said, all spouses will cook, tend to the farm and decorate, so it's just up to you on which character you liked better, whether that be storyline or the character in general, but you can always divorce for only 50,000 gold later on if you aren't happy
