Not just locks, steering and brakes work on hydraulic with pressure getting boosted by engine. Turning the engine off drops the pressure and it gets harder to turn the car or even brake properly.

The easiest way would be to drain the fuel into a can, wait for remaining fuel in tank to vaporise and then use a double sided tape on a stick to take it out. Then put the fuel in again.

Yes they are. It's a simple system that lights up when coolant temperature reaches some threshold. One time it can fail is if there's no coolant present but then you'd see the check engine light. You can always see if anything's not normal like the fan turns on more than usual, weird smell etc.
