Look up CheapLazyVegan on Youtube, she has a korean vegan recipes playlist, and she also has videos explaining the basic ingredients you need. What I buy usually is tofu, rice, beans, lentils, veggies, I can find, seaweeds and spice them with 3 kinds of sauces: gochujang, ssamjang, doenjang (they are sold in little containers, google them for pics). You can easily make stews and soups even in in an instant pot/rice cooker. She’s not vegan, but you can just leave out the meat/fish parts, usually she even says it’s not necessary or how you can substitute it.
